My body is telling me it needs more greens. And I don’t mean mixed salad greens drizzled with dressing, either. I’ve got that one covered. I think this is the point in the summer when my body gets weary of potato salad and potato chips as sides, and craves cancer-fighting, Vitamin C- packed veggies with some bite to it. Enter the broccoli salad that even the kiddos love! Should anyone in your family find it unappetizing to eat raw broccoli, take comfort in knowing you will be smothering them with cheese and bacon. Problem solved.

Cheesy Bacon Broccoli Salad

3 cups fresh broccoli florets
1 cup shredded cheddar cheese
8 bacon strips, cooked and crumbled
1/2 cup finely chopped onion
about 1/2 cup mayonnaise
1/4 cup white vinegar
6 tablespoons sugar

In a bowl, combine the broccoli, cheese, bacon and onion. In another bowl, whisk the mayonnaise, vinegar and sugar. Pour over broccoli mixture and toss to coat. cover and refrigerate for at least 1 hour before serving.
