We love artichoke around here. Every last one of us. Some like the sauce perhaps more than they like the artichoke, but either way, I have to plan for one artichoke per person for ultimate dipping satisfaction. If you are new to the artichoke experience, I’ve whipped up a pretty simple visual tutorial here, complete with my “Special Sauce” formula, to give you a incentive to try.
Enjoy.

Love, Love, Love this post! Partially, because I am so excited to finally have a recipe for your famous choke sauce, but also because the photos are so beautiful. Seriously, you should hang the one of the stem-trimmed artichokes in your kitchen.
Ooh! Also, I recently read that artichokes are one of the most fibrous foods you can eat. Uh Huh, Artichokes, they do a body good! Thanks for always posting both yummy and healthy recipes.
What an art! Life is beautiful!
Did you know that artichokes are a flavor enhancer as well? My husband loves to eat them and then bite into something else and enjoy the 2nd thing immensely more than usual. Thanks for this recipe!
I did not know that! I’m going to have to give it a try!
I just discovered the flavor enhancing quality of artichokes when we were eating some a few weeks ago…I took a drink of my unsweetened hot tea and thought I’d picked up Eric’s sweet tea! Artichokes make everything taste sweeter!
Ruth: I have been dreaming about the artichoke fields we passed last April while driving from Simi Valley up to San Francisco. So they must be on your mind, too!
Thank you for such a delicious tutorial.

“Artichoke fields…?” Deb…you’re killing me.
…so…when we first got married I completely botched artichokes…and I’ve yet to go for round two…however, now I feel equipped and can’t wait to see what Hope & Seth think of them! Thanks for the great tutorial…and, what would you substitute for the TJ’s dressing?
Good questions, Stacey! The TJ’s Goddess dressing is largely tahini based, so perhaps a combo of tahini paste and some other dressing, like a caesar? I’ve also made it with just the mayo and balsamic, etc….not too bad either!
Ruth. I can’t get artichokes out of my mind! We’re making a quick trip to ABQ this weekend and Trader Joes is on my places to go list. I need some of the dressing for this sauce and that soyaki sauce for the soba noodles! I can’t wait!!
