Do you think TJ’s multigrain baking mix would work? Maybe not, I think it has oats and such in it.
I was thinking about using that too, I think it’d be fine. Let me know how it turns out if you end up trying it out.
You know me and coconut…I had to make this the moment I saw your post.
I used Pamela’s gluten free baking mix and it turned out great! The best part about it…no one else in the fam is very fond of coconut, so it’s all for meeeee!
I totally thought of you when I made this pie. Glad to know it can even be gluten free!I I love coconut…sometimes I wonder if E and I actually grew up in the same house!
I’m glad to hear you made it gluten-free. I’m gong to try my hand at making it dairy and egg free too. My husband loves coconut and he has all the food allergies. I don’t have them and don’t care for coconut, so this might be a win-win for him.

After 3 hours, I am back again and I have got to tell you: this will be a regular dessert I have to make. it is easy and oh so yummy! Since I do not like the milk taste too much, I used 1 cup of milk & the other cup I substituted w/ 1 cup of coconut milk. So it tasted more coconut-y w/o over powering the eggs (custard). Love it! Thanks a lot
