When strawberries are on sale… When the weather is following a warming trend… …or you just don’t feel like turning on the oven… When you need a simple and light dessert to serve dinner guests… …turn to this beautiful pie…because everybody loves strawberries! 1 (9 inch) graham cracker crust 3/4 cup sugar 2 tablespoons cornstarch 1/2 cup water 1/4 tsp vanilla extract 1/4 tsp almond extract 1 (3 ounce) package strawberry gelatin (I used peach this time) 4 cups sliced fresh strawberries Puree about 1 1/2 cups of the strawberries in a blender to make approximately 1 cup puree. Combine puree with sugar, cornstarch and water in a unheated medium saucepan. Whisk altogether. Cook over medium heat, stirring occasionally, until mixture comes to a boil. Boil for about 2 minutes, then remove from heat, add in the vanilla and almond extracts. Stir in gelatin until dissolved. Refrigerate for 15-20 minutes or until […]

I must admit: I’m not a naturally good homemaker. Who really is, anyway? If homemaking is simply shopping for home accoutrements, making pretty pillows (or pinning pretty pillows on Pinterest you intend to make), rearranging furniture, or baking cookies, then yes–I think we all would say we enjoy homemaking. But, if the real work at home involves laundry waiting to be put away, dishes that need handwashing, runaway socks that lurk about, meals that I love to make but hate to clean up after, and the ever elusive phantom dust bunnies that laugh at me from the corners of the house–then, the cultivation of a heart for homemaking is a paradigm shift and not a natural disposition. Number 1 has been sick all week with a ferocious stomach bug. He’s been looking forward to this week at Grandma and Grandpa’s for Spring Break for quite some time, and so far, he’s spent most of it on the couch and in the bathroom. My mom-heart breaks for my miserable boy, for his disappointment in dashed vacation hopes, and for all the delicious meals he’s missed out on. We’ve been praying for him to return to health, and for the other four boys to not be next in line. I see the discouragement in his face, and I don’t blame him. How do we as parents, offer perspective and encouragement when our kids (and we ourselves!) are sick and frustrated in the sickness? Every year around this time, the school The Preacher and I helped to start hosts a dinner and silent auction gala. If you’ve been reading here for long, you may remember the photos of previous years, and the past paintings I’ve done for this fundraising event. I’ve posted about my painting process before. A good painting (in my own opinion and aesthetic) always has many many translucent layers, built one on top of the other. I inevitably loathe my painting at some point, and declare it a failure. And…without exception, it turns around, and I know the painting is complete when I start thinking of ways to redecorate or repaint my house in order to keep the painting for myself.
