So, you know how I’ve become addicted to fermenting things…like kimchi, salsa, and kombucha?
Well, I’m thoroughly enjoying what’s called secondary fermentation, which adds the fizz and various flavorings to your kombucha. (In case you are wondering, I like my kombucha on day 7. Troy likes his on day 10 and beyond!)
I’ve been adding a slice of ginger…
…and unsulfered dried tart cherries, and bottling in individual mason jars for ready to serve beverages.
The secondary fermentation draws out the flavor of the additives in a subtle way. I usually drink mine after a day or two after I’ve added the ginger or cherries. My friend Kelly at The Nourishing Home says she adds fresh blueberries! It’s delicious. Try it if you haven’t already!

I’ve never tried kimchi, but the mason jars alone make it pretty appealing! What a charming idea for serving any pre-poured summer drinks!

and kombucha is my favorite drink of all time!

I have never eaten kimchi with avocado on chips. Really? I’m sure to love it!!
I like the second fermentation too…although Im usually too impatient to wait:) I actually use flavored Oolong tea (almond blossom today) to make the kombucha which gives it yummy flavor. What type of green or black tea do you use? Its so fun to experiment isnt it?
I’ve not done green tea yet, but have tried a few black teas. My favorite black tea is one called Ancient Forest, that I purchase from Mountain Rose Herbs. It’s pricey, but organic and super smooth. I’d love to try the oolong!
this post makes me think that i need to hop on this fermentation train. omar laughs at my passion for sauerkraut and kimchi. i love it all. i think kombucha will be my first attempt.
